Hibiscus Pie:
Ingredients-
Handful of dried hibiscus blossoms (frequently available at Mexican grocery stores)
2 cups water
2 heaping tbsp. sugar
2 envelopes plain gelatin
Whipped topping
Pie crust
(I'm not really one for exact measurements--I sort of cook on the fly)
Bring 2 cups of water to boil. Add dried hibiscus blossoms. Turn off heat, cover, and let steep for about 5 minutes.
Strain out the blossoms, add sugar to taste. Let a half-cup of the hibiscus tea cool. Sprinkle the envelopes of plain gelatin over the cooled hibiscus tea and allow the gelatin to bloom for a few minutes. Bring the remaining tea to a boil, then mix in with the gelatin mixture.
Refrigerate until the gelatin is partially, but not completely set. Fold in whipped topping, then pour the mixture in an already-baked and cool pie shell. Refrigerate to set.
It sounds bizarre, but people actually liked it. I'm going to give it a try with other herbal tea ingredients: rosehips, chamomile, chrysanthemum. You might be able to make a catnip pie that would drive a cat insane. |
